Hi, I’m Yuji.
I’m a chef with over 18 years of experience in professional kitchens, including some of Sydney’s iconic restaurants, Quay and Pilu at Freshwater.
Working in these kitchens taught me that a knife is not just a tool — it directly affects how you cook and move in the kitchen.
Later, I spent time in Japan learning about knife making and sharpening, and experienced firsthand the depth of craftsmanship behind Japanese tools.
Mikazuki was born from that experience.
I carefully select Japanese knives for their quality and how they feel in everyday use. I also offer sharpening and maintenance, because a good knife should last.
My goal is simple: to help you find the right knife — and keep it sharp.
And to share the Japanese tradition of caring for tools through sharpening.
To make everyday cooking more enjoyable and meaningful.
“Mikazuki” is written as 美和喜 in Japanese.
It represents beauty, peace, and joy — values we bring to every knife and every kitchen.
