Petty knife is a small all-purpose knife. Compact and good handling the Petty is suitable design for peeling and cutting fruits and vegetables, preparing various kinds of foods and precise work. It could be second most frequently used knife in kitchen after Gyuto or Santoku knife.

Blacksmith Haruki Miyazaki is one of the young generation blacksmiths in Japan. After graduating from high school, he decided to become a blacksmith and apprentice under master craftsman Mr Toshio Oba. After training, he set up his own workshop in Goto, Nagasaki.
Steel type:
Gingami No.3 (Silver Paper No3, Ginsan) is a stainless steel developed by Hitachi Special Stainless Steel. It is a very fine and pure steel for making knives. It has excellent hardness, durability and Rust/ corrosion resistance. Gingami No.3 gets a very sharp edge and it has good edge retention similar to Carbon Steel. It can be easy to resharpen this steel.
Use and Care
- Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break.
- Hand wash with warm water and towel dry.
- Use a sharpening stone to maintain the sharpness of the blade.
- Do not use a dishwasher to clean your knife.
