About steel type:
This knife uses AOGAMI / Blue No.2 carbon steel which is one of the highest quality core steels for cooking knives. Blue No.2 carbon steel has great performance of sharpness and edge retention. Generally this steel will rust if it is left wet or left in contact with something containing any amount of moisture. However in this knife, rust resistant stainless steel is used as cladding with the blue carbon steel only exposed 3-5mm along the knife edge, so you need to wipe and dry it completely to avoid lasting after use .
Use and Care:
- Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break.
- Hand wash with warm water and towel dry.
- Use a sharpening stone to maintain the sharpness of the blade.
- Do not use a dishwasher to clean your knife.
